Water chestnuts is a nutritious vegetable and frequent consumption can bring many benefits to the human body. They can either be eaten as the fruit in raw or cooked as vegetables into delicious dishes. The nutritious value of water chestnuts is considered as the highest among all root vegetables especially regarding the content of phosphorus. Phosphorus is an element which can promote growth and development of the cell and maintain the normal physiological functionality of the teeth and bones. They are also helpful to lower the blood pressure and can facilitate cancer prevention and treatment.

In recent years, studies have found that water chestnuts contain a type of antiviral substance which can suppress the epidemic cerebrospinal meningitis and influenza virus. They can be used to prevent the spread of epidemic cerebrospinal meningitis and influenza.

Water chestnuts are best food for children and patients suffering from fever. Also, for people with high blood pressure, constipation, diabetes and urinary tract infection can also use this vegetable as a auxiliary treatment method.
