Store Long Life Vegetables


Unlike canned food, frozen vegetables can be preserved for a long time without significantly reducing the nutritional value or changing the natural color. If the proper packaging and the temperature is kept at a consistent low one, the quality of frozen vegetables can be nearly the same as the fresh ones.


If vegetables have been placed in a location with a temperature at 17 degrees Celsius, most varieties can be saved for as long as 12-18 months to keep the original quality and taste. Shelf life of unopened commercial frozen vegetables products can be stored for a longer time up to one year. If the marked expired date has been passed, these long life vegetable are still edible although the taste is not as good as the original ones.

In real situation, pallet packaging for dry or frozen vegetables can be used. This type of packaging need proper ways to sanitize vegetables before putting them into special containers. During the sanitation process, vegetables are usually been put in boiling water for 1-2 minutes to kill harmful bacteria, and then be soaked in a sink or large bowl filled with ice and water to stop the heating process. The air will be squeezed out before putting the processed vegetables into freezer bags.

Some family also use try to place some vegetables in a tray or baking container and freeze them. This is good way to pack some certain type of vegetables such as green beans, corns, peas or other small vegetables. Regarding the containers for storing frozen vegetables, they must be moisture-proof and be able to avoid exposure to open air. Rigid plastic or polyurethane containers can be stacked in the freezer and can also be easily labeled. The shortage of this type of container is that the air will be more difficult to drain out. Freezer bags make it easier for clearing air and humidity prior to packaging. Durable metal foil can also be used for packaging vegetables. However, they don’t offer protection capabilities like plastic containers or bags do.
